Practical Cheesemaking: Rooting Out Defects At The Vat, March 18-20, 2020

Join Peter Dixon for three days of hands-on cheesemaking at Briar Rose Creamery, Dundee, OR

Take part in an in-depth discussion of cheesemaking methods and techniques, including natural cheesemaking and autochthonous starter cultures.

Discussion will begin with milk quality, composition, storage, and handling.  As we work through the makes, Peter will focus on techniques and processes, exploring the circumstances that can lead to defects and ways to prevent and circumvent them.

From there we’ll explore the aging of the cheeses, how to spot defects as the rinds develop, and the vital roles of the environment, affinage techniques, and ripening microbes. 

This workshop is designed for intermediate to advanced cheesemakers.  Lunch & handouts included.
