Check out this article on the very first ACS conference held in July 1985 in Bird in Hand, Pennsylvania.  Note the nod to Guilford Farm's Creme Fraiche and the gurgling praise it elicited!  Peter's first cheesemaking gig started in 1983 with the Guilford Cheese Company, his family's farmstead cheese operation, and he was in Bird in Hand with those cheeses.
